Healthy Summer Entertaining

It's summer time, and the grilling is easy. But with swimsuit season in full swing, you won't win any hostess-with-the-mostess awards by stuffing your pals silly with heavy, beefy patties and franks. We asked David Tutera, author of America Entertains (Stewart, Tabori and Chang, 2003) and celebrity party planner for the likes of Barbara Walters, Prince Charles, the Rolling Stones and Elton John, to share his tips for throwing a healthy summer shindig. Your friends will never know you've lightened the menu (unless they happen to get on the scale) and you won't sabotage your own plans to drop a few pounds.

Starters

Why offer the ubiquitous onion dip with limp potato chips (and watch your shady neighbour double-dunk), when healthier, more flavourful options abound? Skewer shrimp and pineapple chunks on the grill for low-fat nibbles, or mix grape tomatoes and watermelon balls for a vibrantly coloured first-course salad. Alternatively, David suggests rolling newspaper, wax paper or white construction paper into cones to fill with grilled asparagus and green beans. Your friends can mingle as they nosh.

Sip Lightly

Party drinks needn't be a choice between decadent pina coladas (mega calories, morning-after bloat) and deprivational diet soda (it's a party, after all). Strike a delicious compromise with white wine sangria brimming with fresh fruit. Or, try David's signature swill: Blend Belvedere vodka, seltzer and a splash of diet lemonade. Garnish with mint.

Main Courses

You don't need to be at the beach to have a clambake, says David, who steams lobster, mussels, clams, shrimp and low-fat turkey sausage along with corn, leeks and onions for a summer seafood classic. You could also serve grilled mahi mahi or tuna brushed with honey on a bed of greens with a side of grilled fruit, fruit salsa or mango chutney. It's an an entr?e with a lot of plate appeal and without the hamburger hangover of old-school barbecue fare.

Sweeten the Deal

Fruits and fresh berries topped with low-fat cr?me fraiche or low-fat whipped cream will satisfy your guests' sweet tooths without sending them spiraling into sugar shock, says David. For a cool finale, scoop a trio of sorbets into a glass or an oblong dish and top them off with a sprig of mint or basil.

Set the Scene

A lot of people think summer parties are just about being outside, says David, adding that in entertaining, as in life, it's the little things that count. So pick a fabulous tablecloth to set the mood, sub your paper plates for colourful plastic, load up on candles (but keep smelly citronellas away from the food) and finish with pots of sunflowers or a tray of natural grass.

Get Moving

Music is the heartbeat of any party, says David. Not only is it salve for the dreaded awkward silence, but the right soundtrack is bound to get your friends burning off their meals faster than your can say merengue. Pop in a crowd-pleasing compilation like Buddha Bar, Aria 1 or 2, Hotel Coast or Pottery Barn's party mixes, and you're good to groove.

Look Natural Wear Makeup!

Have you ever considered how difficult it is to look natural? Quite difficult ? isn?t it? Especially if there had been no makeup available to achieve it! Many-a-website points out how ordinary our glamorous celebrities look in real life without makeup on. No wonder then that they are always on the lookout for innovative makeup supplies. Such demands have seen a virtual makeover for the makeup business much to the delight of a demanding population yearning to look good.

The art and science of good makeup.

Makeup is still an art ? supported ably, of course, by science. Gone are the days when good makeup meant just soaps, perfumes and oils carefully selected after word-of-mouth recommendation. Today, your persona comes through in MAC makeup ? or was it Max Factor? Take your pick! Show off your gorgeous eyes - wear eye makeup. Impress your peers with a prom makeup worn specially for the nite.

Make a statement with a tattoo or a strategic permanent makeup. Take expert advice ? makeup tips are available for the asking. Desist from using chemicals which may harm your sensitive skin ? wear mineral makeup instead! Consider this ? you don?t have to wear stage makeup if you don?t need to flaunt your expressions under the arc lights to an audience.

Wear makeup ? an appropriate one. Or better still; don?t wear any ? especially if you are among the lucky few who can carry off that natural look ? naturally!

It is simple to look and feel more beautiful starting today. You can even put away your pocketbook because these tips are free.

1. Smile... it will brighten your day and others around you will feel your energy.

2. Stretch... cats know that total body stretch does wonders. Follow their example and roll up slowly out of bed and stretch gently. (For more tips on stretching here is a great book: AM/ PM Stretch for Health.)

3. Exercise... at least 20 mins of any continuous activity will boost your energy level and reduce bad stressors. You don't even to pay a membership fee. The key is continuous like a 20min walk or even mopping your floors. You will look and feel better.

4. Drink water. No other liquid is quite like it. Clear your system. 8 glasses are recommended daily. Your skin will radiate.

5. Rest... you need to take breaks during the day and sleep at night. Takes breaks away from work space to keep fresh and focused. Make sure you are getting sufficient sleep at night since your body regenerates while you are sleeping. If you are constantly letting your mind wonder make a conscious decision to put away thoughts till morning. It is amazing how good your subconscious mind listens to your conscious mind (so be careful what you tell yourself)

6. Do good. When you do something for someone else without expecting anything in return you benefit in ways unimaginable. (the key is don't expect anything in return)

7. Exchange... the money you spend on junk food for food that will enrich your body and soul. Start with a simple plan of exchange. Because some think healthy foods cost more, find out your spending pattern by making 2 lists:

. foods you like that are healthy that you normally don't buy

. foods you like that are junk food that you normally buy

calculate the cost of the 2nd list then use this amount to fund your healthy purchase. (of course you have to say bye-bye to the junk food)

8. Stop and smell the roses. Look for good in everything. This is a toughie because most of us are trained to look for faults, errors, shortcomings, defects, etc. Begin with yourself. List all your assets (not just physical). Then realize all the good in being you. Move on to other things around you. Work on this consciously every day till it becomes a habit. There is something good about everything and everyone. Once you realize this you will be finding good everywhere without even trying.

9. Learn... something new every day. Pick up a book. or search online. Learn to do something you have always wanted to do. You can even start for free by researching online. Search the subject and start stimulating and enriching your mind today.

10. Reward yourself. Set financial and personal goals and tag them with rewards for accomplishing them. (this one may be something special you have always wanted to do. and not necessarily a purchase.. But if you have done all the above maybe go ahead and splurge a little. You deserve it!
